Berry Cream Cheese Dessert

Fresh berries with cream cheese and a ricotta topping make this a very nice and light summer dessert from dLife.com. I think this dessert is better if you use the berry mixture instead of just strawberries and the ginger snap cookies instead of the chocolate wafers.

Ingredients

½ cup fat free cream cheese
½ cup Cheese, ricotta, reduced fat
3 SPLENDA® , or 3 Tbsp. sugar
½ tsp grated orange peel (or lemon peel)
1 tbsp orange juice
3 cup fresh sliced strawberries (and/or raspberries, and/or blueberries)
4 Cookies, ginger snap , broken (or chocolate wafers)

Directions

  1. In a blender container or food processor bowl combine cream cheese, ricotta cheese, powdered sweetener, orange peel, and orange juice. Cover and blend or process until smooth.
  2. Cover and chill for 4 to 24 hours.
  3. To serve, divide berries among dessert dishes. Top with cream cheese mixture and sprinkle with broken cookies.
